(Hong Kong, August 3, 2021) As the culinary world gears up for the event of the season, the highly-anticipated Gelinaz! Grand Shuffle 2021, Lai Sun Dining is proud to announce that Executive Chef of China Tang Landmark, Menex Cheung, will be joining the Hong Kong edition as the one and only Chinese Cuisine Chef amongst the 200 chefs invited to participate around the world this year.
Taking place on August 29, the long-awaited event marks the 2nd edition of Gelinaz! Grand Shuffle in Hong Kong. Aiming to bridge the divide between food, art and culture, Gelinaz! is an annual celebration of gastronomy which brings together some of the world’s best chefs, from household names such as Rene Redzepi and Dominique Crenn, to pioneering culinary innovators such as Mauro Colagreco and Albert Adrià. For Gelinaz! Grand Shuffle in Hong Kong, each chef will remix recipes for a specially curated menu featuring eight one-off dishes, replete with Perrier-Jouët champagne and drinks pairings.

Amongst the 200 invited chefs participating this year, Chef Menex—who has helmed the kitchen at China Tang Landmark since 2019—is the only chef to represent the vast canon of Chinese cuisine, showcasing his boundless culinary creativity on the grand Gelinaz! stage. With this unique opportunity, Chef Menex aims to expand guests’ horizons and deepen their understanding and appreciation of Chinese foodways, while showcasing a diverse range of techniques and long-standing culinary traditions.
“I heard about this event when I was working in China, and was intrigued by the mystery and excitement of it. I never expected to be able to participate, let alone as the only Chinese Cuisine Chef this year. It is a true honour, and I am looking forward to exploring and interacting with the group of extremely talented chefs,” said Chef Menex.
In addition to Chef Menex, the Gelinaz! Grand Shuffle 2021 in Hong Kong will feature organiser May Chow (Little Bao), Aurelie Altemaire (Odyssée Creative Dining), Agustin Balbi (Andō), Ricardo Chaneton (Mono), Steve Lee (Hansik Goo), and Stephanie Wong (Roots). With seven chefs and eight never-before-seen menus, the event promises to be an unforgettable evening featuring boundary-pushing recipes from Hong Kong’s leading culinary trailblazers.

About China Tang
China Tang was founded by Dr Peter Lam Kin-ngok – a renowned gourmand and fine-dining connoisseur, and the late Sir David Tang Wing-cheung. Debuting in 2013 at the Landmark, the distinctive traditional Chinese art and intricate design details reflect the sensibilities of our two founders: hand-painted and embroidered tapestries, classic thread-bound manuscripts, modern artwork and inimitable modern Chinese style.
A celebration of Chinese cooking, our menu features beloved Cantonese dishes, while also paying homage to the flavours of Sichuan and Beijing. To this day, China Tang embodies Dr Lam’s strict “ingredients first” philosophy – from organic local produce and fresh seafood to quality seasonal ingredients imported from around the world, everything is hand-picked for quality at the peak of flavour. Our chefs continue to expand the boundaries of Chinese cooking techniques, shunning additives and MSG to ensure each dish is not only delicious, but healthy and nutritious as well.
