CIAK – In the Kitchen exudes a cosy home-like atmosphere, resembling a traditional Italian marketplace with an open kitchen and warm décor. The name ‘CIAK’ is derived from the Italian word for a clapperboard used on film sets, which is reflected in the restaurant’s bustling and energetic open kitchen, welcoming guests to watch their dishes being made. The authentic Italian setting and unbeatable pizzas were granted the ‘Top Pizzeria in Asia 2020’ award, in the ultimate guide to the best pizzerias in Italy and the world, compiled by 50 Top Pizza and a panel of judges in Italy.

The superiority of pizza at CIAK – In The Kitchen comes from the unique dough creation process. The premium quality blend of four different flours, eighteen-year-old live yeast imported from Italy, followed by 36 hours of slow-fermentation, collectively take the dough to the next level. In effect, the end product is an aromatic pizza with a golden crust, flavourful crumb and crispy crunch. At the same time, due to its all-natural ingredients, the dough is very light and easy to digest. “The yeast is the base of everything, the base of the fermentation. If the yeast is not good, the pizza will not be perfect, no matter how great the toppings are.” shares Chef Ugolini.

Among the array of pizzas on the menu, the Chef’s favourite is the Pizza Tartufo Nero (HK$1,680), a luxurious pizza underlined by the creaminess of mozzarella and taleggio cheese, inspired by the star ingredient – black truffle from Europe. An addition of sausage and Italian egg yolk provides an extra savoury layer and texture complexity to make the dish satiating and indulgent. For a hearty meat dish, the Norcina pizza (HK$240) hits the spot with homemade Italian sausage, mushroom, and mozzarella cheese. To teleport diners to a seaside holiday destination, Mediterranea (HK$190) is an exquisite seafood pizza with a classic tomato sauce base, fresh Mediterranean anchovies, black olives, and aromatic garlic oil. As a house rule, Chef Ugolini recommends to fold up a slice of pizza from the sides and eat from the pointy end, so that the hot melty cheese and toppings stay intact and prevent from spilling out.

There is also a variety of Italian comfort foods on the menu. A must-try starter is the Red Prawn Tartare (HK$380) made from Sicilian red prawn, served with Osetra caviar, orange dressing and fennel salad. When in the mood for pasta, a great choice is the homemade seafood Fettucine (HK$390), featuring fresh delicacies such as Sicilian red prawn, Sardinian bottarga, cherry tomatoes and zucchini. Another item not to miss is the Fiorentina Style Mayura T-Bone Steak (1.5kg) (HK$1,900) from Australia, cooked to tenderness and served with signature CIAK mustard sauce and horseradish cream. When dining as a pair, the perfect option is the Whole Grilled Sea Bass (HK$680) serving two people, a great light meal with a mild, delicate flavour of the Italian fish meat. CIAK has also created irresistible desserts to end the feast, such as the creamy Tiramisu (HK$140) or Apple Crumble Tart (HK$130) with vanilla ice cream.

For those craving a delicious lunch outing, the Seasonal Set Lunch (HK$388) at CIAK is the way to go. Diners will be able to choose a first and second course from the menu, featuring seasonal specials such as the Baked Smoked Scamorza Cheese with homemade sausage and black truffle, or the Classic Carbonara – a true Italian favourite served with homemade tagliolini and black truffle. To keep the party going, a choice of dessert or cheese selection can be enjoyed with the lunch at an additional HK$80.
