The Founder of Yakitori Yamato

Shin Kawaguchi, the founder, and chef of Yakitori Yamato is from Mie Prefecture. He is trained by his uncle who works in the chicken meat trade and is considered one of the best chicken Artisans (Shokunin) in Osaka since the age of 20. Over 10 years, he learned a lot from him, like how to prepare, preserve and butcher a chicken and even developed a special method to aging the chicken to enhance its umami.
