As the year’s most coveted reservation, QUAN is helmed by culinary wunderkind Justin Yang (楊艷彬), the celebrated runner-up of the hit culinary competition show “The Divine Dish” and recipient of the prestigious “Young Chef Award” from both the Michelin Guide and the Black Pearl Restaurant Guide. Rooted in the philosophy of “Rooted in Fujian, Dialoguing with the World”, Chef Justin masterfully elevates the rich mountain-and-sea culinary heritage of Quanzhou, Fujian, through a lens of progressive techniques and refined modern aesthetics. He crafts a singular dining experience that promises to inject vibrant, unexpected energy into Hong Kong’s diverse dining landscape.
Chef Justin Yang, is renowned for extracting the soul of traditional culinary foundations and distilling them into a highly personal, contemporary aesthetic. Though deeply versed in Minnan cuisine, Chef Justin refuses to be bound by convention. Instead, he seamlessly fuses a global perspective with modern culinary techniques and local terroirs to elevate Chinese heritage for the modern epicurean.
Chef Justin’s career is decorated with extraordinary accolades. He previously helmed Xiamen’s CHIC 1699, securing a coveted One-Diamond rating from the Black Pearl Restaurant Guide, before moving to the Waldorf Astoria Xiamen to shape the identity of HOKKLO, a contemporary champion of a refined modern take on traditional Fujian cooking. Seeking his next challenge, he took the reins at Hokkien Cuisine in Chengdu, leading the team to its first Michelin star within just one year and personally clinching the “Young Chef Award” in the Michelin Guide Chengdu 2024. The culinary star’s meteoric rise continued into 2025, when he was named in the prestigious “Forbes China Fu Chef 30” and received the “Fu Chef – Chinese Flavor Pioneer Award”. In 2026, he won the “Young Chef Award” from the Black Pearl Restaurant Guide. Beyond the hushed halls of fine dining, Chef Justin captured the public imagination on the television screen, showcasing his masterful technique to millions and winning first runner-up on the hit national cooking show “The Divine Dish”.

Rooted in Fujian, Dialoguing with the World | The Five Elements Philosophy
“QUAN” (泉) pays homage to Chef Justin’s ancestral home, the ancient cultural port of Quanzhou. Cradled by the Daiyun Mountains on one side and the Taiwan Strait on the other, Quanzhou’s culinary identity is defined by a bountiful dialogue between land and sea, mountain treasures and pristine coastal catch. While the restaurant pays tribute to these geographic roots, it transcends regional limitations. At QUAN, Chef Justin introduces his “Five Elements”, which serve as the creative backbone of every dish:

“At QUAN, my goal is to distill the essence of Chinese culinary culture through my own personal style and modern techniques, breaking down traditional geographical borders,” says Chef Justin. “I want to create a dining experience that offers global gourmands a fresh, worldly perspective on contemporary Chinese gastronomy.”

Perched in CCB Tower in the heart of Hong Kong’s financial district, QUAN offers sweeping, unobstructed views of Central’s iconic skyline and Victoria Harbour. Designed by the acclaimed design studio Studio Amal, the space is a masterclass in understated elegance.
The dining room is swathed in a soothing palette of celadon green, anchored by the wall illustrations depicting the texture of banyan trees, a nostalgic nod to the ancient banyans that shaded Chef Justin’s childhood home. Large floor-to-ceiling windows flood the space with natural light, seamlessly blending the dynamic energy of the city below with the serene, plant-filled sanctuary inside. The result is an intimate yet commanding oasis of contemporary luxury.
